Description

These Zucchini Fries are a delicious alternative to traditional fries, using only 4 simple ingredients. They are crispy, flavorful, and perfect for a healthier snack or side dish.

Ingredients

Units Scale

Zucchini Fries:

  • 2 large zucchini
  • 2 large eggs
  • 2 cups panko bread crumbs
  • 1/2 cup parmesan cheese, finely grated
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the oven: Preheat the oven to 200°C/400°F. Line a large baking sheet with parchment paper and set aside.
  2. Slice zucchini: Slice zucchini into thin matchsticks. In a small bowl, whisk eggs. In a separate bowl, combine breadcrumbs, parmesan cheese, salt, and pepper.
  3. Coat zucchini: Dip zucchini in egg, then in the breadcrumb mixture. Place on the lined sheet. Repeat for all zucchini.
  4. Bake: Bake zucchini fries for 22-25 minutes, turning regularly for crispiness. Serve hot.

Notes

  • You can customize the seasoning by adding herbs or spices to the breadcrumb mixture.
  • For extra crunch, you can lightly spray the fries with cooking oil before baking.
