Zucchini Fries:
- 2 large zucchini
- 2 large eggs
- 2 cups panko bread crumbs
- 1/2 cup parmesan cheese, finely grated

Instructions
- Preheat the oven: Preheat the oven to 200°C/400°F. Line a large baking sheet with parchment paper and set aside.
- Slice zucchini: Slice zucchini into thin matchsticks. In a small bowl, whisk eggs. In a separate bowl, combine breadcrumbs, parmesan cheese, salt, and pepper.
- Coat zucchini: Dip zucchini in egg, then in the breadcrumb mixture. Place on the lined sheet. Repeat for all zucchini.
- Bake: Bake zucchini fries for 22-25 minutes, turning regularly for crispiness. Serve hot.
