Coconut Snowmen Truffles

  • 320g (11.25 oz) dairy-free sweetened condensed milk, 1 regular can
  • 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling

To Decorate

  • 3 tablespoons vegan white chocolate, or white candy melts, melted and as needed
  • 3 tablespoons black-colored icing, or as needed
  • 2 tablespoons orange-colored icing, or as needed
  • 24 thin pretzel sticks, 2 inches (5 cm) each
  • 12 red candy straps, 5 inches (13 cm) each


Instructions

  1. Combine Ingredients: Add the shredded coconut and dairy-free sweetened condensed milk to a large mixing bowl. Mix thoroughly using a wooden spoon or hand mixer until the mixture is well combined and sticky.
  2. Form Snowmen Balls: Divide the mixture to create about 12 larger balls and 12 smaller balls. These will serve as the bodies and heads of the snowmen, respectively. Roll each ball firmly to maintain shape.
  3. Coat in Coconut: Roll each coconut ball in extra shredded coconut to cover the surface evenly, giving the snowmen a snowy appearance.
  4. Assemble Snowmen: Take each larger ball and dab a little melted vegan white chocolate on top, then place a smaller ball on it to form the snowman shape. Let the assembled snowmen firm up either at room temperature or in the refrigerator.
  5. Decorate: Use piping bags or toothpicks to apply black icing to create eyes and buttons on the snowmen. Use orange icing to form noses. Insert pretzel sticks gently into the sides of each snowman to form arms, and wrap red candy straps around the necks as scarves. Use melted white chocolate as ‘glue’ to secure decorations if necessary.
  6. Store: Keep the finished snowmen truffles in an airtight container. They can be stored at room temperature for 1 day, refrigerated for up to 1 week, or frozen for up to 1 month. Note that pretzel sticks may soften over time.

  • The number of snowmen depends on the size you roll each truffle; this recipe yields approximately 12 snowmen.
  • If sweetened condensed milk is unavailable, substitute with 1 cup (240g) thick scoopable coconut cream combined with 1/4 cup (85g) maple syrup, noting the mixture will be less sticky and may require adjustments.
  • The icing can be tricky to adhere to the coconut-covered surface; after piping each dot, lightly press or scrape the piping tip next to the dot to help it stick better. Imperfections are part of the charm!
