Scale
- 1 cup turkey drippings (from roast turkey)
- 4 cups low-sodium chicken broth (or turkey broth)
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter
- Salt and pepper, to taste
- Fresh herbs (such as thyme, rosemary, or sage), to taste
Instructions
- Prepare for Straining: Place a large bowl under a fine-mesh sieve.
- Separate Drippings: Collect the drippings from your roasted turkey and separate the fat from the liquid. Reserve the liquid for the gravy.
- Warm Broth: In a saucepan, warm the chicken or turkey broth over low heat.
- Make Roux: In a separate saucepan, melt the butter over medium heat. Gradually whisk in the flour to form a roux. Cook for 2-3 minutes, stirring constantly, until the raw flour taste is gone, but do not brown.
- Combine Ingredients: Slowly whisk the warmed broth into the roux, stirring constantly to prevent lumps. Add the reserved turkey drippings and fresh herbs (if using).
- Simmer and Season: Bring the mixture to a boil, then reduce heat and simmer until thickened. Season with salt and pepper to taste.
- Strain (Optional): For a smoother gravy, strain the mixture through the prepared sieve.
- Serve: Serve hot with your roasted turkey and other Thanksgiving dishes.
Notes
- Use turkey drippings for the best flavor.
- Use low-sodium broth to control salt levels.
- Substitute cornstarch for flour if you need a gluten-free gravy.
- Add your favorite fresh herbs for extra aroma and flavor.
- Straining the gravy is optional but recommended for a smoother texture.
