For the Parmesan Paste:
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons garlic and herb seasoning
- 1 teaspoon kosher salt
For the Potatoes:
- 1 (24 ounce) package baby Yukon Gold potatoes, halved
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat oven to 425°F (220°C). Place butter in a 9 x 13-inch baking dish or nonstick baking pan and melt in the oven for about 4 minutes.
- Prepare the Potatoes: Score the potatoes about 1/4-inch-deep in a diamond pattern. Set aside.
- Make Parmesan Paste: Remove the pan from the oven, cool slightly, then stir Parmesan cheese, garlic, herb seasoning, and salt into the melted butter to form a paste.
- Coat Potatoes: Spread about 1 teaspoon of the Parmesan paste on the cut side of each potato and place them cut-side down in the pan.
- Bake: Bake for about 25 minutes until the potatoes are tender and the Parmesan forms a golden crust.
- Serve: Let the potatoes stand for 5 minutes before using a spatula to release them from the pan.
