Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook potatoes: Bring a large saucepan of salted water to a boil. Add the chopped potatoes and cook until tender but still firm, about 15 minutes. Drain the potatoes and mash them until smooth; set aside.
- Cook beef mixture: While potatoes are cooking, combine ground beef and chopped onion in a large skillet over medium-high heat. Cook, stirring occasionally, until the beef is evenly browned and crumbly and the onion is tender, approximately 7 to 10 minutes. Drain excess fat if necessary.
- Add vegetables and soups: Stir in the drained carrots, green beans, condensed cream of mushroom soup, and condensed tomato soup into the beef mixture. Mix well to combine.
- Assemble casserole: Transfer the beef mixture to the prepared baking dish. Spread the mashed potatoes evenly over the top of the beef mixture. Sprinkle the shredded Cheddar cheese over the mashed potatoes.
- Bake: Bake in the preheated oven for about 30 minutes or until the top is light golden brown and bubbly, indicating it’s heated through and cheese is melted to perfection.
