Cake Layer

  • 1 box Party Rainbow Chip cake mix (or Funfetti cake mix), prepared according to package directions

Pudding Layer

  • 2 (3.4-ounce) packages of vanilla instant pudding & pie filling mix
  • 4 cups milk
  • Blue food coloring
  • Pink food coloring

Whipped Topping Layer

  • 1 (16-ounce) container whipped topping, thawed

Decorations

  • Green, pink, and blue edible candy grass
  • Easter egg candies (e.g., Whoppers Robin Eggs)

Instructions

  1. Bake the Cake:
    Prepare the cake mix according to the package directions and bake it with parchment paper lining the pan for easy removal. Remove the cake from the pan 10 minutes after baking and transfer it to a cooling rack. Let the cake cool completely. Then, using a serrated knife, cut the cake into 1-inch cubes.
  2. Prepare the Pudding:
    In two separate bowls, make the pudding by following the package directions. Add a few drops of blue food coloring to one bowl and pink food coloring to the other. Gradually add the color until you achieve your desired pastel shades.
  3. Assemble the Trifle:
    Place a tight, even layer of cake cubes at the bottom of a trifle dish. Then, spoon one bowl of colored pudding over the cake layer. Spread 2 cups of whipped topping over the pudding. Repeat the process with another layer of cake cubes, the other pudding color, and finish with 2 more cups of the whipped topping.
  4. Chill:
    Refrigerate the assembled trifle for at least 4 hours to allow it to set and for the flavors to meld together.
  5. Make Candy Nests:
    Create bird nests from the candy grass by taking half-inch thick sections and twisting them into small circles. Make 2 nests each of pink, blue, and green.
  6. Decorate and Serve:
    Just before serving, arrange the candy nests on top of the trifle. Place 3 candy eggs inside each nest for a festive decoration. Store any leftovers covered in the refrigerator for up to 3 days

Notes

  • If you prefer, you can substitute the Party Rainbow Chip cake mix with any vanilla or yellow cake mix.
  • Gel food coloring works better than liquid for richer pastel tones.
  • You can make the trifle a day ahead to save time – it tastes even better after resting overnight in the refrigerator!
  • For an added chocolate twist, you can sprinkle some shaved chocolate between layers
