Topping (optional)

Instructions
- Divide Ingredients.
Divide the overnight oats ingredients evenly into two mason jars or bowls with airtight lids. This ensures equal portions for your servings. - Mix Ingredients.
Stir the ingredients in each mason jar or bowl until evenly distributed. Combine well to ensure a uniform flavor and texture. - Melt Chocolate for Topping.
In a microwave-safe bowl, melt the white chocolate chips and coconut oil in the microwave. Heat in 30-second intervals, stirring after each interval until smooth and fully melted. - Prepare Topping Mixture.
Slowly mix the yogurt into the melted white chocolate mixture. Add 1 tablespoon at a time, stirring continuously, until smooth and creamy. - Add the Topping.
Spoon the prepared topping over each overnight oat jar. For extra garnish, sprinkle additional shredded coconut, grated or chopped carrots, and chopped walnuts, if desired. - Refrigerate Overnight.
Seal each jar with a lid and refrigerate overnight to allow the flavors to develop and the oats to soften. - Serve and Enjoy.
In the morning, grab your carrot cake overnight oats from the fridge, give them a gentle stir, and enjoy straight from the jar or in a bowl!
