Peach Mixture

  • 5 peaches, peeled, cored, and sliced (about 4 cups or 600-700 g)
  • 3/4 cup granulated sugar (150 g)
  • 1/4 teaspoon salt

Batter

  • 6 tablespoons butter (85 g)
  • 1 cup all-purpose flour (120 g)
  • 1 cup granulated sugar (200 g)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk (180 ml)
  • Ground cinnamon, for sprinkling

Instructions

  1. Prepare the peaches: Add the sliced peaches, 3/4 cup sugar, and 1/4 teaspoon salt to a saucepan. Stir to combine and cook over medium heat just a few minutes until the sugar dissolves and the peaches start to release their juices. Remove from heat and set aside.
  2. Preheat oven and melt butter: Preheat your oven to 350°F (175°C). Slice the butter into pieces and place them in a 9×13 inch baking dish. Put the dish in the oven as it preheats to melt the butter evenly. Once melted, carefully remove the pan from the oven.
  3. Make the batter: In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and 1/4 teaspoon salt. Stir in the milk just until combined to form the batter. Pour this batter evenly over the melted butter in the baking dish without stirring.
  4. Add peaches and cinnamon: Spoon the peaches and their juices evenly over the batter. Sprinkle ground cinnamon generously over the top to add warm spice and flavor.
  5. Bake the cobbler: Bake in the preheated oven for 38-40 minutes until the top is golden brown and a toothpick inserted into the batter comes out clean. The peach juices should be bubbling through the topping.
