Peach Mixture
- 5 peaches, peeled, cored, and sliced (about 4 cups or 600-700 g)
- 3/4 cup granulated sugar (150 g)
- 1/4 teaspoon salt
Batter
- 6 tablespoons butter (85 g)
- 1 cup all-purpose flour (120 g)
- 1 cup granulated sugar (200 g)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk (180 ml)
- Ground cinnamon, for sprinkling
Instructions
- Prepare the peaches: Add the sliced peaches, 3/4 cup sugar, and 1/4 teaspoon salt to a saucepan. Stir to combine and cook over medium heat just a few minutes until the sugar dissolves and the peaches start to release their juices. Remove from heat and set aside.
- Preheat oven and melt butter: Preheat your oven to 350°F (175°C). Slice the butter into pieces and place them in a 9×13 inch baking dish. Put the dish in the oven as it preheats to melt the butter evenly. Once melted, carefully remove the pan from the oven.
- Make the batter: In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and 1/4 teaspoon salt. Stir in the milk just until combined to form the batter. Pour this batter evenly over the melted butter in the baking dish without stirring.
- Add peaches and cinnamon: Spoon the peaches and their juices evenly over the batter. Sprinkle ground cinnamon generously over the top to add warm spice and flavor.
- Bake the cobbler: Bake in the preheated oven for 38-40 minutes until the top is golden brown and a toothpick inserted into the batter comes out clean. The peach juices should be bubbling through the topping.
- Serve warm: Allow the cobbler to cool slightly before serving. It’s excellent served warm, especially with a scoop of vanilla ice cream or whipped cream if desired.
Notes
- If using canned peaches, skip the step of cooking the fresh peaches with sugar and salt and instead spoon the canned peaches with their syrup over the batter.
- For a more pronounced cinnamon flavor, mix cinnamon into the batter as well as sprinkling on top.
- This peach cobbler can be made ahead and reheated in the oven before serving.
- To peel peaches easily, blanch them in boiling water for 30 seconds and then transfer to ice water to loosen the skins.
