  • 3 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • Flour and coarse cornmeal for dusting

For the topping:

  • 2 boneless, skinless chicken breasts
  • Kosher salt and pepper
  • 1/2 cup your favorite BBQ sauce, plus more for drizzling
  • 2 ears corn on the cob
  • 2 green onions
  • 4 ounces freshly grated sharp white cheddar cheese
  • 4 ounces freshly grated mozzarella cheese
  • 2 ounces finely grated parmesan cheese, plus more for topping
  • 1/4 cup your favorite ranch dressing
  • 3 tablespoons chopped fresh chives
  • Quick pickled onions, for topping
  • Fresh basil and cilantro for topping

Instructions

  1. Prepare the dough: In a large bowl, combine water, yeast, honey and olive oil. Mix and let sit until foamy, about 10 minutes. Add flour and salt, stir until dough forms. Knead on a floured surface, form into a ball, and let rise in an oiled bowl for 1 to 1.5 hours.
  2. Grill the chicken: Preheat grill to high. Season chicken with salt and pepper, brush with BBQ sauce, and grill for about 5 minutes per side until internal temperature reaches 165°F. Rest for 10 minutes, then chop.
  3. Grill corn and scallions: Grill corn for 10-12 minutes, rotating occasionally. Grill scallions for 2-3 minutes. Slice corn off the cob and chop scallions.
  4. Shape the dough: Punch down risen dough and shape into desired form on a floured surface. Let rest under a towel.
  5. Prepare toppings: Have all ingredients ready – chopped chicken, grated cheeses, corn, scallions, and sauces.
  6. Assemble the pizza: Transfer dough to a floured and cornmeal-dusted pizza peel. Spread BBQ sauce, layer cheeses, chicken, corn, scallions, and drizzle with more BBQ sauce and ranch dressing.
  7. Grill the pizza: Slide pizza onto grill grates, reduce heat under pizza to low. Close lid and cook for 5-8 minutes until crust is golden and bubbly.
  8. Finish and serve: Transfer pizza to a cutting board. Top with parmesan, ranch dressing, chives, basil, cilantro, and pickled onions. Slice and enjoy!
