Salad

  • 4 cups chopped romaine lettuce
  • 2 cups corn kernels (fresh-cut, grilled, or sautéed)
  • 1 cup halved cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 cup crumbled cotija cheese

Dressing

  • 1/2 cup sour cream
  • 2 tablespoons salsa
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Prepare the base of the salad.
    In a large bowl, add the chopped romaine lettuce as the base. Then, toss in the fresh corn kernels, halved cherry tomatoes, chopped red onion, and chopped cilantro. Stir everything together to combine evenly.
  2. Add the cheese.
    Crumble the cotija cheese and sprinkle it over the salad mixture. Gently stir again to ensure the cheese is incorporated with the other ingredients.
  3. Make the dressing.
    In a separate mixing bowl, combine sour cream, salsa, lime juice, salt, pepper, and garlic powder. Whisk these ingredients together until the dressing is smooth and creamy.
  4. Dress the salad.

Notes

  • Using raw corn adds a crunchy texture, but grilling or sautéing the corn can bring out a smoky, caramelized flavor that enhances the salad.
