Description

These Spinach Puffs are a delightful and savory treat that’s perfect for a party appetizer, brunch, or a light lunch. Flaky puff pastry is filled with a creamy mixture of spinach, feta cheese, and bacon, then baked to golden perfection. These bite-sized puffs are easy to make and sure to impress your guests!


Ingredients

  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried dill
  • 2 cups fresh spinach, chopped and packed
  • 3/4 cup crumbled feta cheese
  • 2 teaspoons bacon bits
  • Salt and pepper, to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon butter, melted

Instructions

  1. Prepare Muffin Tin: Preheat oven to 400°F. Spray 9 cups in a muffin pan with cooking spray.
  2. Make Filling: Soften cream cheese in the microwave. In a bowl, combine cream cheese, egg, olive oil, and dill; mix well. In a separate bowl, combine spinach, feta cheese, and bacon bits. Pour the cream cheese mixture over the spinach mixture and season with salt and pepper. Mix well with a fork.
  3. Fill Pastry Cups: Cut the puff pastry sheet into 9 squares. Line the muffin cups with pastry squares, stretching them slightly to fit. Press the pastry into the bottom of each cup. Divide the spinach filling evenly among the cups. Bring the pastry corners together over the filling and pinch to seal. Brush with melted butter.
  4. Bake: Bake for 20 minutes, or until golden brown and puffy.
  5. Cool and Serve: Let cool for 10 minutes before removing from the muffin tin. Use a knife to loosen the edges if needed. Serve warm or at room temperature.

Notes

  • You can use frozen chopped spinach, thawed and squeezed dry, instead of fresh spinach.
  • For a vegetarian version, omit the bacon bits.
  • These puffs can be assembled ahead of time and baked just before serving.
