- 1 russet potato, peeled and cubed
- 1 tablespoon olive oil
- 1 shallot, finely chopped
- 1/3 cup chopped frozen spinach, thawed and drained
- 1 tablespoon butter or margarine
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Cook Potatoes: Boil potatoes until very tender, about 15 minutes. Drain and mash with butter, salt, pepper, and garlic powder until smooth.
- Sauté Shallot: While potatoes cook, heat olive oil in a skillet over medium heat. Add shallot and cook for 6-8 minutes, or until softened. Season with salt and pepper.
- Combine and Cool: Combine mashed potatoes and sautéed shallot. Let cool completely.
- Shape Croquettes: Form the mixture into 15-20 small balls.
- Bake: Preheat oven to 350°F. Place croquettes on a lined baking sheet and bake for 30-40 minutes, or until golden brown and crispy.
- Serve: Serve hot with your favorite dipping sauce, such as marinara sauce, sour cream, or aioli.
Notes
- For a richer flavor, use half butter and half olive oil for mashing the potatoes.
- You can add other seasonings to the potato mixture, such as dried herbs or spices.
- To make ahead, prepare the croquettes up to step 4 and refrigerate. Bake when ready to serve.
