Description

  • 1 refrigerated pie crust, or homemade
  • 3 tablespoons olive oil
  • 2/3 cup yellow onion, minced
  • 3 cloves garlic, minced
  • 20 ounces spinach, stems removed and chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons dried dill
  • 1 cup crumbled feta cheese
  • 1 cup ricotta cheese
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 large eggs, beaten

Instructions

  1. Prepare Crust: Preheat oven to 350°F (175°C). Line a 9-inch pie dish with the pie crust. Refrigerate while preparing filling.
  2. Sauté Onions and Spinach: In a large skillet over medium-high heat, sauté onion in olive oil until tender. Add spinach and garlic, sauté until spinach wilts. Remove from heat.
  3. Combine Cheese Mixture: In a large bowl, whisk together parsley, dill, feta, ricotta, Parmesan, salt, pepper, and eggs.
  4. Add Spinach: Add the spinach mixture to the bowl and mix thoroughly.
  5. Fill Pie Crust: Remove the pie crust from the fridge and fill with the spinach filling.
  6. Bake: Bake for 45-50 minutes, until the top is golden brown.
  7. Rest: Remove from oven and let rest for at least 5 minutes before serving.

Notes

  • Use fresh spinach for best results.
  • You can use other cheeses like mozzarella or goat cheese.
  • For a deeper flavor, add a pinch of nutmeg to the cheese mixture.
  • A pre-baked crust will prevent a soggy bottom.
