- 3 tablespoons olive oil
- 2/3 cup yellow onion, minced
- 3 cloves garlic, minced
- 20 ounces spinach, stems removed and chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons dried dill
- 1 cup crumbled feta cheese
- 1 cup ricotta cheese
- 1 cup shredded Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 large eggs, beaten
Instructions
- Prepare Crust: Preheat oven to 350°F (175°C). Line a 9-inch pie dish with the pie crust. Refrigerate while preparing filling.
- Sauté Onions and Spinach: In a large skillet over medium-high heat, sauté onion in olive oil until tender. Add spinach and garlic, sauté until spinach wilts. Remove from heat.
- Combine Cheese Mixture: In a large bowl, whisk together parsley, dill, feta, ricotta, Parmesan, salt, pepper, and eggs.
- Add Spinach: Add the spinach mixture to the bowl and mix thoroughly.
- Fill Pie Crust: Remove the pie crust from the fridge and fill with the spinach filling.
- Bake: Bake for 45-50 minutes, until the top is golden brown.
- Rest: Remove from oven and let rest for at least 5 minutes before serving.
