Crust

- 5.1 ounce instant vanilla pudding mix
- 2 cups milk
Chocolate Pudding
- 5.1 ounce instant chocolate pudding mix
- 2 cups milk

Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F. Spray a 9×13 inch baking dish with cooking spray to prevent sticking.
- Make and Bake Crust: In a mixer, combine chopped pecans, granulated sugar, melted unsalted butter, and all-purpose flour until well blended. Press the mixture evenly into the prepared baking dish. Bake for about 20 minutes until lightly golden and set. Remove and let cool completely.
- Prepare Vanilla Pudding: Prepare the instant vanilla pudding according to package instructions using 2 cups of milk instead of 3 cups for a firmer consistency. Set aside to thicken.
- Prepare Chocolate Pudding: Similarly, prepare the instant chocolate pudding using 2 cups of milk instead of 3 cups for thicker pudding. Set aside to thicken.
- Mix Cream Cheese Layer: In a mixer, combine cream cheese, powdered sugar, and 1 cup cool whip (or whipped cream). Beat until the mixture is light and fluffy.
- Assemble Layers: Once the crust has cooled, spread the cream cheese mixture evenly over it. Next, layer the vanilla pudding over the cream cheese, followed by the chocolate pudding layer.
- Top and Chill: Spread the remaining 2 cups of cool whip (or whipped cream) as the final layer. Optionally, sprinkle shaved chocolate on top for garnish. Refrigerate the assembled dessert for a couple of hours until fully set before serving.
Notes
- Using 2 cups of milk instead of 3 for the puddings makes a firmer layer, which helps with slicing and layering.
- For less sweetness in the cream cheese layer, reduce powdered sugar to ½ cup.
- The dessert improves in flavor after chilling overnight.
- Shaved chocolate topping is optional but adds a nice texture and chocolate flavor contrast.
- Make sure the crust is fully cooled before layering to prevent melting the cream cheese layer.
