Description

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise

Instructions

  1. Roast Garlic: Preheat oven to 400°F (200°C). Peel away outer layers of the garlic bulb, leaving cloves intact. Slice off the top of the bulb to expose the cloves. Drizzle with olive oil and wrap tightly in aluminum foil. Roast for 30-40 minutes, or until soft and golden brown.
  2. Prepare Garlic: Let the garlic cool slightly. Squeeze roasted cloves out of their skins into a bowl. Mash with a fork until smooth.
  3. Make Aioli: In a separate bowl, combine mashed garlic, mayonnaise, lemon juice, and Dijon mustard. Stir until well blended. Season with salt and pepper to taste.
  4. Chill and Serve: Garnish with fresh herbs (optional). Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.
