Cauliflower Steaks:
- 1 large head of cauliflower
- 3 tablespoons extra virgin olive oil
- 1 teaspoon salt
Additional Ingredients:
- 1 head of garlic
- 2 tablespoons raw pine nuts
- 1 teaspoon avocado, grapeseed, or olive oil
- 1/4 cup fresh chopped parsley
- For the tahini sauce:
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 1/4 teaspoon salt
- 3-4 tablespoons water
Instructions
- Preheat the oven: Preheat the oven to 400F and line a large baking sheet with parchment paper.
- Prepare the cauliflower: Trim the cauliflower leaves and stem, then cut the cauliflower into steaks. Brush with olive oil, season with salt, and place on the baking sheet.
- Roast the cauliflower: Cut the garlic head, wrap in foil, and place it on the baking sheet. Roast the cauliflower for 40-45 minutes until tender.
- Toast the pine nuts: In a skillet, sauté pine nuts until golden brown. Set aside.
- Make the tahini sauce: Whisk tahini, salt, and lemon juice. Add water gradually until desired consistency. Squeeze roasted garlic into the sauce and whisk until creamy.
- Serve: Spoon tahini sauce on a plate, place cauliflower steaks on top, and garnish with parsley and toasted pine nuts.
