  • 1 medium acorn squash
  • 2 tablespoons butter, divided
  • 2 tablespoons maple syrup, divided
  • 1 pinch salt

Instructions

  1. Preheat oven to 425º Fahrenheit. Prepare the acorn squash by slicing it in half, removing the seeds, and cutting a thin slice off the bottom for stability.
  2. Place the squash on a baking sheet, cut side up, sprinkle with salt, and roast for 15 minutes.
  3. Remove from oven and place a pat of butter and drizzle 1 tablespoon of maple syrup in each squash cavity.
  4. Continue roasting for another 25-35 minutes, basting every 10 minutes, until the flesh is soft and easily pierced with a fork.
  5. Once roasted, let the squash cool slightly before serving.
