These Berry Oat Bars are a delightful treat that perfectly balances the sweetness of raspberry preserves with hearty oats, creating a satisfying snack or dessert.


Ingredients

Dry Ingredients:

  • 1 1/2 cups all-purpose flour or gluten-free substitute
  • 1 1/2 cups quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1/2 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1/3 cup coconut sugar or granulated sugar
  • 1/2 cup raspberry preserves

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and grease an 8×8 baking pan. Set aside.
  2. Mix Ingredients: In a large bowl, combine all dry ingredients. Mix well. Then add in the wet ingredients, excluding the raspberry preserves.
  3. Layering: Press ⅔ of the mixture into the bottom of the prepared pan, creating an even layer.
  4. Add Preserves: Spread the raspberry preserves gently over the pressed mixture, leaving a small border around the edges.
  5. Crumble Topping: Sprinkle the remaining ⅓ of the mixture on top of the preserves, lightly pressing it down.
  6. Bake: Bake for 25-30 minutes until the top is lightly browned.
  7. Cool and Serve: Allow the bars to cool in the pan on a rack. Cut into bars and serve.
