Dry Ingredients:
- 1 1/2 cups all-purpose flour or gluten-free substitute
- 1 1/2 cups quick oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients:
- 1/2 cup coconut oil, melted
- 1/3 cup maple syrup
- 1/3 cup coconut sugar or granulated sugar
- 1/2 cup raspberry preserves
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and grease an 8×8 baking pan. Set aside.
- Mix Ingredients: In a large bowl, combine all dry ingredients. Mix well. Then add in the wet ingredients, excluding the raspberry preserves.
- Layering: Press ⅔ of the mixture into the bottom of the prepared pan, creating an even layer.
- Add Preserves: Spread the raspberry preserves gently over the pressed mixture, leaving a small border around the edges.
- Crumble Topping: Sprinkle the remaining ⅓ of the mixture on top of the preserves, lightly pressing it down.
- Bake: Bake for 25-30 minutes until the top is lightly browned.
- Cool and Serve: Allow the bars to cool in the pan on a rack. Cut into bars and serve.
Notes
- These bars can be stored in an airtight container for up to 3 days.
