Scale
For the Marinade
- 1/2 cup ranch dressing
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley (or fresh, chopped)
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice (optional)
For the Skewers
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- Wooden or metal skewers
Instructions
- Prepare the Marinade: In a bowl, combine ranch dressing, Parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice if using. Mix well until thoroughly combined.
- Marinate the Chicken: Place the chicken cubes in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours for more flavor.
- Prepare the Skewers: Thread marinated chicken onto skewers, leaving space between pieces for even cooking. If using wooden skewers, soak in water for 15 minutes beforehand to prevent burning.
- Cook the Skewers: Preheat grill or oven. For grilling, cook skewers over medium-high heat for 10-15 minutes, turning occasionally until chicken reaches an internal temperature of 165°F (75°C) and has a slight char. For oven, arrange on a baking sheet and bake at 400°F (200°C) for approximately 15-20 minutes, turning halfway through.
- Serve and Garnish: Let the skewers rest for a few minutes, then garnish with extra parsley or Parmesan. Serve with sides or dipping sauces of choice.
Notes
- Soaking wooden skewers prevents burning; metal skewers require no soaking.
- You can substitute chicken thighs for breasts for juicier skewers.
- Marination can be extended up to 24 hours for maximum flavor, but at least 30 minutes is sufficient.
- Grilling provides a smoky char, but baking is a great alternative if outdoor grilling isn’t available.
- These skewers pair well with grilled vegetables, rice, or a fresh green salad.
