  • 50 g granulated sugar
  • 1 large egg, room temperature

  • 100 g semi-sweet or dark chocolate, roughly chopped
  • 50 g unsalted pistachios, shelled and roughly chopped
  • flaky salt, for sprinkling
  • 150 g pistachio cream spread

Instructions

  1. Freeze pistachio spread: Line a plate with parchment paper. Freeze pistachio spread until solid.
  2. Prep: Line a cutting board with parchment paper.
  3. Flour mixture: Combine dry ingredients in a bowl.
  4. Butter mixture: Whisk butter and sugars, then add egg and vanilla.
  5. Combine flour and butter mixtures: Mix until just combined.
  6. Fold in chocolate and pistachios: Add and fold in the chocolate and pistachios.
  7. Scoop cookie dough: Use a cookie scoop to form dough balls.
  8. Stuff cookie dough: Fill dough with frozen pistachio cream.
  9. Add toppings: Press toppings onto dough balls.
  10. Bake: Bake at 350°F for 11-12 minutes. Sprinkle with salt.
