Instructions

Using a cookie scoop or a spoon, form the mixture into 18 small balls, about 1 inch each, and place them on a parchment-lined baking sheet. Refrigerate the cheese balls for about 1 hour to allow them to firm up.
  2. Cook the bacon: While the cheese balls are chilling, heat a large nonstick skillet over medium heat. Add the bacon slices and cook, turning occasionally, until the bacon is crisp and evenly browned, approximately 8 minutes. Remove the bacon to a paper towel-lined plate to drain excess fat, then transfer to a cutting board and finely chop.
