- 3/4 cup (170g) unsalted butter, melted and slightly cooled
- 2 cups (400g) packed light or dark brown sugar
- 3/4 cup (190g) creamy peanut butter
- 2 large eggs + 1 extra egg yolk
- 1 Tablespoon pure vanilla extract
- 2 cups (250g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 and 1/4 cups (about 260g) Reese’s Pieces
Instructions
- Prepare Pan: Preheat the oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang.
- Combine Wet Ingredients: In a large bowl, whisk melted butter and brown sugar. Whisk in peanut butter, eggs, egg yolk, and vanilla.
- Add Dry Ingredients: Add flour, baking powder, and salt. Fold into the batter.
- Add Reese’s Pieces: Fold in Reese’s Pieces. Spread into the prepared pan.
- Bake: Bake for 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Cool: Allow the bars to cool completely in the pan.
- Cut and Serve: Lift the bars out of the pan and cut into squares.
- Store: Cover leftover bars and store at room temperature for up to 1 week.
Notes
- Use creamy, processed peanut butter for best results.
- Blondies can be frozen for up to 3 months.
- Do not over bake.
