Description

This refreshing Peach Bellini recipe features sweet peaches blended with sparkling Prosecco and peach schnapps for a vibrant, celebratory drink. Perfect for brunch, parties, or a summer gathering, this easy cocktail is bursting with real fruit flavor and can be garnished with fresh peach slices and mint.

Ingredients

Units Scale

Main Ingredients

  • 1 lb frozen peaches, chunks or slices
  • 3 cups Prosecco
  • 1/3 cup Peach Schnapps or peach vodka
  • 2 tablespoons simple syrup or granulated sugar, optional

Optional Garnishes

  • Fresh peach slices
  • Mint leaves

Instructions

  1. Prepare the Peaches: Place the frozen peach chunks or slices into a blender. If you like your Bellini a little sweeter, add the simple syrup or granulated sugar at this stage.
  2. Blend the Mixture: Pour in the peach schnapps (or peach vodka) and blend until the mixture is completely smooth, creating a thick peach puree.
  3. Add Prosecco: Gradually pour in the Prosecco, pulsing the blender gently to incorporate it without losing too much carbonation. Do not overblend to keep the cocktail bubbly.
  4. Serve: Pour the finished Peach Bellini into champagne flutes or cocktail glasses. If desired, garnish with fresh peach slices and mint leaves for a beautiful presentation.

Notes

  • Use frozen peaches for a frosty texture and ease of preparation—no need to peel or pit fresh peaches.
  • Adjust sweetness to taste; add more or less simple syrup depending on the ripeness of your fruit and your preference.
  • For a non-alcoholic version, substitute sparkling water or non-alcoholic sparkling wine for the Prosecco and omit the schnapps or vodka.
  • If you like a smoother drink, strain the peach puree before mixing with Prosecco.
  • Serve immediately to enjoy the bubbles at their best.
