Toffee Coating
- 1 cup Dark brown sugar (or light brown sugar)
- 1 cup Unsalted butter
- 1 tsp Vanilla extract
- 2 tsp Ground cinnamon (divided)
Topping
- 3 tbsp Granulated sugar
- 3/4 tsp Kosher salt
Instructions
- Prepare the Baking Sheet: Preheat your oven to 350 degrees F (175 degrees C). Line an extra-large rimmed baking sheet with aluminum foil and cover it with parchment paper to prevent sticking.
- Arrange the Crackers: Spread the oyster crackers evenly in a single layer on the prepared baking sheet, ensuring they are well spaced for even coating.
- Mix Cinnamon Sugar Topping: In a small bowl, combine 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt. Set this mixture aside to sprinkle later.
- Make the Toffee: In a small heavy-bottomed saucepan over medium heat, melt the butter and stir in the brown sugar. Bring the mixture to a boil and allow it to boil for 2 minutes, stirring occasionally to prevent burning. Remove from heat and stir in vanilla extract and the remaining 1 teaspoon of ground cinnamon.
- Coat the Crackers: Pour the hot toffee mixture evenly over the oyster crackers on the baking sheet. Gently toss or stir the crackers to coat them evenly with the toffee glaze.
- Bake to Finish: Bake the coated crackers in the preheated oven for 10 minutes or until the mixture is bubbly and golden.
- Add Final Cinnamon Sugar: Remove the batch from the oven and immediately sprinkle the reserved cinnamon sugar mixture evenly over the warm crackers.
