For the Pasta:
- 1 tbsp olive oil
- 5 cloves garlic, minced
- 4 cups cherry tomatoes, about 560g
- 1 tbsp harissa paste, or Calabrian chili paste
- 1/2 lbs spaghetti, gluten-free if needed
- 3 1/2 cups boiling water
- 1/3 cup nutritional yeast
- 1 handful fresh basil
Instructions
- Saute Tomatoes and Garlic: In a saute pan over medium heat, add the olive oil, cherry tomatoes, and garlic. Saute until fragrant and tomatoes begin to soften, about 3 minutes.
- Add Chili Paste and Spaghetti: Stir in the chili paste, then add the spaghetti. Pour boiling water over it.
- Cook Pasta: Cook and stir frequently until pasta is tender and water has almost evaporated, creating a light sauce.
- Finish and Serve: Turn off the heat, stir in nutritional yeast and basil. Enjoy immediately, optionally with vegan parmesan.
