Ingredients

  • 2 Tbsp olive oil, divided
  • 3-4 oz bone-in pork chops
  • Kosher salt and black pepper to taste

Sauce:

  • 3/4 cup low sodium chicken stock
  • 1 tsp Dijon mustard or whole-grain Dijon
  • 1 Tbsp fresh sage, chopped
  • 1 1/2 tsp fresh rosemary, chopped
  • 1/2 tsp fresh thyme, chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Additional:

  • 2 medium apples, thinly sliced (Gala recommended)
  • 1 small red onion, thinly sliced

Instructions

  1. Season Pork Chops: Season pork chops with salt and pepper.
  2. Sear Pork Chops: Sear in olive oil until mostly done. Remove and set aside.
  3. Prepare Sauce: Whisk together chicken stock and mustard.
  4. Cook Apples and Onions: Saute apples and onions with herbs.
  5. Add Pork Chops: Return pork chops to the pan.
  6. Simmer: Cook until pork chops are done and liquid reduces.
