Instructions

  1. Make the Crust: In a medium bowl, mix together the graham cracker crumbs and melted butter until the mixture resembles wet sand. Spoon the mixture evenly into individual serving jars (about 4–6 jars, depending on size), and press down gently to form the crust layer. Chill the jars while you prepare the filling.
  2. Whip the Cream: Using a hand or stand mixer, whip the cold heavy cream on medium-high speed until stiff peaks form, about 3–4 minutes. Set aside.
  3. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese, granulated sugar, sour cream, lemon juice, and vanilla extract together on medium speed until smooth and creamy, about 2–3 minutes.
  4. Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until fully combined, taking care not to deflate the whipped cream.
  5. Assemble the Jars: Spoon or pipe the cheesecake filling over the prepared crust in each jar. Smooth the tops with a spoon if desired.
