Ground beef and pork are mixed with flavorful seasonings, garlic, and carrot, then baked in muffin tins with grape tomatoes hidden inside. Creamy mashed potatoes are piped on top to resemble mummy bandages, with peas adding a playful touch for eyes.

Meatloaf Mixture
- 3/4 lb. white or yellow potatoes
- Kosher salt and pepper, to taste
- 2 large eggs
- 2 Tbsp. ketchup
- 2 tsp. Worcestershire sauce
- 1/2 cup panko or plain bread crumbs
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 3/4 lb. ground beef
- 1/2 lb. ground pork
- 12 grape tomatoes
Mashed Potato Topping
- 3/4 cup lowfat sour cream
- 24 oz. peas (for eyes)
Instructions
- Prepare and Boil Potatoes: Heat oven to 375°F. Line a 12-cup muffin tin with foil liners. Place the potatoes in a pot, cover with cold water, and bring to a boil. Add 1 tsp kosher salt, reduce heat, and simmer until potatoes are just tender, about 15 to 18 minutes.
- Mix Meatloaf Ingredients: While potatoes cook, in a large bowl, combine eggs, ketchup, Worcestershire sauce, 1/2 tsp salt, and 1/4 tsp pepper. Stir in bread crumbs, minced garlic, and grated carrot. Add ground beef and ground pork, mixing just until combined to avoid overworking the meat.
- Assemble Meat Loaves and Bake: Divide the meat mixture evenly among the foil liners in the muffin tin. Press a grape tomato into the center of each meatloaf. Transfer to the preheated oven and roast until internal temperature reaches 155°F, about 14 to 16 minutes.
- Prepare Mashed Potato Topping: Drain the cooked potatoes and return them to the pot. Add sour cream and 1/4 tsp salt, then mash until very smooth. Transfer the mashed potatoes to a pastry bag fitted with a 1/2-inch ribbon tip.
- Decorate as Mummies: Remove the meat loaves from the oven and transfer to a serving platter. Pipe mashed potatoes over each meatloaf back and forth to create the look of mummy bandages. Place two peas on each loaf to create eyes, completing the mummy effect.
