Instructions
- Preheat Oven: Preheat oven to 400°F. Lightly grease a 24-cup mini muffin tin and set aside.
- Mix Ingredients: In a large bowl, combine mashed potatoes, beaten eggs, 3/4 cup of shredded cheese, and chives. Season with salt and pepper.
- Fill Muffin Cups: Spoon the potato mixture into the prepared muffin tin cups, almost to the top.
- Add Cheese: Top each puff with the remaining 1/4 cup shredded cheese.
- Bake: Bake for 15-20 minutes until puffed and golden brown.
- Cool and Serve: Allow to cool for 5 minutes, then gently remove the puffs from the tin. Serve warm, garnished with chives and sour cream if desired.
