For the Spaghetti:
- 12 ounces spaghetti, cooked al dente
For the Chicken:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
For the Sauce:
- 1 cup shredded Monterey Jack cheese
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
For Garnish:
- Fresh parsley for garnish
Instructions
- Cook the Spaghetti: Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: Season the chicken pieces with paprika, Italian seasoning, salt, and pepper. Cook in olive oil until golden brown and fully cooked. Remove and set aside.
- Prepare the Sauce: In the same skillet, cook onion and garlic until softened. Add chicken broth and heavy cream, simmer until slightly thickened.
- Combine: Add spaghetti and chicken back to the skillet. Toss to coat in the sauce.
- Add Cheese: Sprinkle Monterey Jack cheese over the top. Cover and let melt.
- Serve: Garnish with parsley and serve warm.
Notes
- This dish pairs well with a side of garlic bread or a fresh garden salad.
- To add a kick of heat, sprinkle red pepper flakes over the finished dish.
