For the Salad:
- 8 cups cubed watermelon, about 1″ in size
- 4 cups hulled and quartered strawberries
- 3 cups blueberries
For the Dressing:
- 18 large mint leaves, chopped
- 1/2 cup fresh lime juice
- 4 tablespoons powdered sugar
- 4 tablespoons white rum (optional)
For Jicama Stars:

Instructions
- Prepare the Fruit: Place watermelon, strawberries, and blueberries in a large bowl.
- Make the Dressing: In a small bowl, mix chopped mint, lime juice, and powdered sugar. Muddle the mint with the back of a spoon to release its flavor. Stir in rum if using.
- Combine: Drizzle the dressing over the fruit. Gently fold everything together. Chill the salad in the fridge to let the flavors meld. It can be made ahead but mix before serving.
- Optional Jicama Stars: Cut jicama into 1/4″ slices and use a star-shaped cutter to create stars. Add them to the salad just before serving.
