Ingredients

Units Scale

Shrimp Base

  • 1 pound peeled jumbo shrimp
  • 1/2 cup dry white wine
  • 1/2 stick (4 tablespoons) unsalted butter, melted (divided use)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • 3 garlic cloves, minced

Topping

  • 3/4 cup panko breadcrumbs
  • 1/4 cup finely grated parmesan cheese
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 1 tablespoon finely chopped fresh parsley

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 425°F (220°C). Meanwhile, pour the white wine and 2 tablespoons of melted butter into a 13×9-inch baking dish and spread evenly. Place the dish in the oven as it heats and leave it in for about 10 minutes, so the mixture gets hot and slightly reduces.
  2. Make the Lemon-Garlic Shrimp Mixture: In a large bowl, combine the remaining melted butter, lemon juice, minced garlic, salt, and black pepper. Add the peeled shrimp and toss well to coat each piece in the mixture for maximum flavor.
  3. Prepare the Panko Topping: In a separate bowl, mix the panko breadcrumbs with 2 tablespoons of melted butter, parmesan cheese, and salt. Stir until the mixture becomes evenly coated and slightly moist.
  4. Assemble in Baking Dish: Once the wine and butter are hot, carefully remove the baking dish from the oven. Add the shrimp mixture, spreading the shrimp in an even single layer.
  5. Add the Topping: Sprinkle the prepared panko-parmesan mixture evenly over the shrimp to ensure they are well covered for a crisp, golden finish.
  6. Bake: Place the dish back in the oven and bake for about 12 minutes, or until the shrimp are pink and opaque, and the topping is beginning to brown.
  7. Broil for Crispiness: Switch the oven to broil, and broil the dish for 1-2 minutes, until the top is golden brown and crispy. Watch carefully to avoid burning.
  8. Garnish and Rest: Remove from oven, sprinkle the chopped fresh parsley evenly on top, and let it rest for 5 minutes before serving for the flavors to meld together.

Notes

  • For extra lemon flavor, add some zest to the shrimp mixture.
  • Be careful not to overcook the shrimp; they cook quickly and should be just opaque.
  • You can substitute regular breadcrumbs for panko, but the topping may be less crunchy.
  • Serve immediately for the crispiest topping.
  • Pairs well with a simple salad, pasta, or steamed vegetables.
