Crust
- 1/2 cup (1 stick / 113 g) unsalted butter, softened
- 1 1/3 cups (167 g) all-purpose flour
- 1/4 cup (50 g) granulated sugar

- 3/4 cup (150 g) granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 3 tablespoons fresh lime juice
- 1 tablespoon lime zest

- Confectioners’ sugar, for dusting
Instructions
- Prepare the Pan: Preheat oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with nonstick cooking spray to prevent sticking and ensure easy removal of bars.
- Make the Crust: In a medium bowl, mix together the softened butter, all-purpose flour, and granulated sugar until the mixture is crumbly but holds together when pressed. This forms the buttery base of your bars.
- Press the Crust: Firmly and evenly press the crust mixture into the bottom of the prepared pan, using your fingers or the bottom of a measuring cup to create an even layer.
- Bake the Crust: Bake the crust for 15 to 20 minutes, or until the edges are a light golden brown. Remove from oven but keep oven on for the next step.
- Prepare the Filling: While the crust bakes, in a medium bowl, whisk together the lightly beaten eggs, granulated sugar, flour, baking powder, fresh lime juice, and lime zest until the mixture is smooth and well combined.
- Add the Filling: As soon as the crust comes out of the oven, pour the lime filling over the hot crust, spreading it evenly.
- Bake the Bars: Return the pan to the oven and bake for an additional 15-20 minutes, or until the filling is just set in the center, and the edges are lightly golden.
- Finish and Cool: Remove from oven and immediately dust the top with confectioners’ sugar. Allow the bars to cool completely to room temperature, then refrigerate overnight for best texture and flavor.
