  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest

Instructions

  1. Prepare the Pan: Preheat oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with nonstick cooking spray to prevent sticking and ensure easy removal of bars.
  2. Make the Crust: In a medium bowl, mix together the softened butter, all-purpose flour, and granulated sugar until the mixture is crumbly but holds together when pressed. This forms the buttery base of your bars.
  3. Press the Crust: Firmly and evenly press the crust mixture into the bottom of the prepared pan, using your fingers or the bottom of a measuring cup to create an even layer.
  4. Bake the Crust: Bake the crust for 15 to 20 minutes, or until the edges are a light golden brown. Remove from oven but keep oven on for the next step.
  5. Prepare the Filling: While the crust bakes, in a medium bowl, whisk together the lightly beaten eggs, granulated sugar, flour, baking powder, fresh lime juice, and lime zest until the mixture is smooth and well combined.
  6. Add the Filling: As soon as the crust comes out of the oven, pour the lime filling over the hot crust, spreading it evenly.
  7. Bake the Bars: Return the pan to the oven and bake for an additional 15-20 minutes, or until the filling is just set in the center, and the edges are lightly golden.
