  • 3 lbs. boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp fresh cilantro, chopped (optional)

Instructions

  1. Prepare the Spice Mix: In a small bowl, combine the garlic powder, onion powder, paprika, dried oregano, black pepper, and salt to create the spice blend. This mix will give the chicken a robust flavor profile.
  2. Season the Chicken: Sprinkle half of the spice blend evenly over the chicken thighs. Flip the chicken pieces and sprinkle the remaining spices on the other side. Rub the spices into the chicken to ensure each piece is well coated.
  3. Cook on Grill Pan: Heat a nonstick grill pan over medium heat and drizzle with olive oil. Arrange half of the chicken pieces on the pan, leaving space between them. Cook without moving for 5 minutes, then flip and cook for an additional 3 to 5 minutes until fully cooked. Repeat this process for the remaining chicken pieces.
  4. Alternatively – Broil the Chicken: Preheat your oven’s broiler and position the rack about 6 inches from the heat source. Place a wire rack on a large baking tray and arrange the chicken thighs on it. Broil the chicken for 6 minutes, then flip each piece and broil for another 5 to 6 minutes until cooked through.
  5. Rest and Garnish: Allow the cooked chicken to rest for 5 minutes to retain juices. Optionally, sprinkle with fresh chopped cilantro for a fresh herbal note before serving.
