Description

This Lasagna Soup is a comforting and flavorful twist on a classic Italian dish. All the flavors of lasagna come together in a hearty soup with ground sausage, tender noodles, and a rich tomato broth. Topped with ricotta and parmesan cheese, it’s a satisfying and easy meal that’s perfect for any occasion.

Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 1 pound mild Italian sausage, casings removed
  • 32 ounces chicken stock
  • 30 ounces petite diced tomatoes with juice (two 15-ounce cans)
  • 6 ounces tomato paste
  • 1 teaspoon ground oregano
  • 1/2 teaspoon Italian seasoning
  • 23 tablespoons freshly chopped basil, more to taste
  • 8 uncooked lasagna noodles, broken into bite-sized pieces
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese, optional
  • Kosher salt and pepper, to taste
  • Ricotta cheese for serving

Instructions

  1. Brown Sausage and Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion and cook until softened. Stir in garlic and cook for 1 minute. Add sausage, breaking it up with a spoon, and cook until browned. Drain any excess grease.
  2. Simmer Soup: Pour in chicken stock, diced tomatoes, and tomato paste. Stir in oregano, Italian seasoning, and basil. Bring to a light boil, then add broken lasagna noodles. Cook for 8-10 minutes, or until noodles are tender.
  3. Add Cheese: Stir in parmesan cheese and mozzarella cheese (if using). Season with salt and pepper to taste.
  4. Serve: Ladle soup into bowls and top with a spoonful of ricotta cheese and additional basil, if desired.

Notes

  • Substitute ground beef or turkey for the Italian sausage, adding ½ teaspoon extra Italian seasoning.
  • Add shredded carrots or zucchini for extra vegetables.
  • For a thinner soup, add more chicken stock or broth.
  • Crockpot Version: Brown sausage and onions beforehand. Add all ingredients except noodles and cheese to the slow cooker; cook on low for 7-8 hours or high for 3-4 hours. Cook pasta separately and add to the slow cooker with cheese during the last 15-20 minutes of cooking.
