- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 1 pound mild Italian sausage, casings removed
- 32 ounces chicken stock
- 30 ounces petite diced tomatoes with juice (two 15-ounce cans)
- 6 ounces tomato paste
- 1 teaspoon ground oregano
- 1/2 teaspoon Italian seasoning
- 2–3 tablespoons freshly chopped basil, more to taste
- 8 uncooked lasagna noodles, broken into bite-sized pieces
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese, optional
- Kosher salt and pepper, to taste
- Ricotta cheese for serving
Instructions
- Brown Sausage and Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion and cook until softened. Stir in garlic and cook for 1 minute. Add sausage, breaking it up with a spoon, and cook until browned. Drain any excess grease.
- Simmer Soup: Pour in chicken stock, diced tomatoes, and tomato paste. Stir in oregano, Italian seasoning, and basil. Bring to a light boil, then add broken lasagna noodles. Cook for 8-10 minutes, or until noodles are tender.
- Add Cheese: Stir in parmesan cheese and mozzarella cheese (if using). Season with salt and pepper to taste.
- Serve: Ladle soup into bowls and top with a spoonful of ricotta cheese and additional basil, if desired.
Notes
- Substitute ground beef or turkey for the Italian sausage, adding ½ teaspoon extra Italian seasoning.
- Add shredded carrots or zucchini for extra vegetables.
- For a thinner soup, add more chicken stock or broth.
- Crockpot Version: Brown sausage and onions beforehand. Add all ingredients except noodles and cheese to the slow cooker; cook on low for 7-8 hours or high for 3-4 hours. Cook pasta separately and add to the slow cooker with cheese during the last 15-20 minutes of cooking.
