Ingredients

Units Scale
  • 1 pound potatoes (any variety), cubed into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 4 tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon roughly chopped fresh parsley

Instructions

  1. Boil Potatoes: Place cubed potatoes in a large pot and cover with cold water. Bring to a boil over medium heat and cook until fork-tender. Drain the potatoes.
  2. Make Honey Butter Sauce: In a large skillet, melt butter over medium heat. Stir in honey, salt, and pepper.
  3. Cook Potatoes: Add the cooked potatoes to the honey butter sauce. Increase heat to medium-high and cook for 5-6 minutes, or until golden brown and slightly crispy on one side. Carefully flip the potatoes and cook for another 5-7 minutes, or until golden brown on all sides.
  4. Garnish and Serve: Toss with fresh parsley and serve warm.

  • For a spicier kick, add a pinch of red pepper flakes to the honey butter sauce.
  • Garnish with other fresh herbs, such as thyme or rosemary, for variation.
  • These potatoes are best served immediately, but leftovers can be reheated in the oven or on the stovetop.
