Description

Keto Egg Bites are a delicious, low-carb breakfast or snack option packed with protein and flavor.   • 2 tbsp milk

  • 1/2 cup cheddar cheese, grated

For the Filling

  • 1/2 tbsp olive oil
  • 1/4 cup onion, chopped
  • 1/2 cup ham, cubed

Instructions

  1. Preheat Oven – Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it with nonstick spray or lining with silicone muffin liners.
  2. Sauté Fillings – Heat olive oil in a small skillet over medium heat. Add the chopped onion and cubed ham, then sauté for 3-4 minutes until the onions are soft and translucent. Remove from heat and let cool slightly.
  3. Prepare Egg Mixture – In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Stir in the grated cheddar cheese.
  4. Assemble Egg Bites – Evenly divide the sautéed onion and ham mixture among the muffin cups. Pour the egg and cheese mixture over the fillings, distributing it evenly in each cup.
  5. Bake – Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and slightly golden on top.
  6. Cool & Serve – Let the egg bites cool in the tin for a few minutes before removing. Serve warm, or store in an airtight container in the refrigerator for up to 4 days.

Notes

  • You can substitute ham with cooked bacon, sausage, or keep it vegetarian by adding spinach or mushrooms.
  • Egg bites can be frozen for up to 2 months; reheat in the microwave or oven before serving.
  • For a creamier texture, use heavy cream instead of milk.
