Description

A soothing and flavorful Japanese Clear Soup made by simmering a blend of chicken and beef broth with aromatic vegetables and ginger, then garnished with fresh scallions and mushrooms. This traditional broth-based soup is perfect as a light starter or a comforting dish.

Ingredients

Scale

Broth and Flavorings

  • 2 teaspoons sesame oil (or peanut oil)
  • 8 cups chicken broth
  • 4 cups beef broth
  • 4 cups water

Vegetables and Aromatics

  • 1 large sweet onion, peeled and cut into wedges
  • 6 cloves garlic, peeled and smashed
  • 2 large carrots, cut into chunks
  • 2 inch piece fresh ginger, sliced
  • 4 whole scallions, chopped
  • 10 button mushrooms, sliced thin
  • Salt, to taste

Instructions

  1. Sear the Vegetables: Place a large 8-quart stock pot over medium-high heat and add the sesame oil. Add the onion wedges, smashed garlic cloves, carrot chunks, and sliced ginger. Sear the vegetables on all sides to caramelize and develop flavors, being careful not to burn the garlic.
  2. Add Broths and Simmer: Pour in the chicken broth, beef broth, and water into the pot with the seared vegetables. Bring the mixture to a boil, then lower the heat to maintain a low boil. Let it simmer gently for at least one hour to allow the flavors to meld.
  3. Strain the Broth: Use a skimmer or slotted spoon to remove the vegetables from the broth. Taste the broth and season with salt as needed.
  4. Serve: Ladle the hot clear broth into bowls. Garnish each bowl with chopped scallions and thinly sliced button mushrooms for freshness and texture. Serve immediately.

Notes

  • You can substitute vegetable broth for a lighter flavor but the combination of chicken and beef broth gives the soup its rich depth.
  • For a gluten-free version, ensure the broths used are gluten-free.
  • Do not burn the garlic while searing, as it can impart a bitter taste.
  • This soup can be served as a starter or alongside a Japanese meal to cleanse the palate.
