- 1 small head green cabbage, thinly sliced
- 3 teaspoons olive oil
- 1 tablespoon butter
- 1/2 sweet onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup shredded carrot
- 1 jalapeño or habanero pepper, finely diced (optional, for heat)
- 3 green onions, chopped
- 2–3 sprigs fresh thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/4 cup water
- 2 tablespoons white vinegar
- 1 tablespoon granulated sugar
Instructions
- Prepare Cabbage: Rinse and thinly slice the cabbage.
- Sauté Vegetables: Heat olive oil and butter in a large pot or Dutch oven over medium heat. Add diced onion and cook for 2-3 minutes. Stir in garlic and cook for 1 minute. Add red bell pepper, carrot, and green onions; cook for 3-4 minutes.
- Cook Cabbage: Add sliced cabbage, salt, pepper, onion powder, paprika, thyme sprigs, and water to the pot. Cover and reduce heat to medium-low. Simmer for about 10 minutes, or until cabbage is tender.
- Finish: Stir in white vinegar and sugar. Cook for 1-2 minutes more.
- Serve: Remove thyme sprigs and serve warm.
Notes
- Adjust the amount of jalapeño or habanero pepper to your preferred level of heat.
- If you don’t have fresh thyme, you can substitute with ½ teaspoon of dried thyme.
