  • 1 tablespoon butter
  • 1/2 sweet onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup shredded carrot
  • 1 jalapeño or habanero pepper, finely diced (optional, for heat)
  • 3 green onions, chopped
  • 23 sprigs fresh thyme
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4 cup water
  • 2 tablespoons white vinegar
  • 1 tablespoon granulated sugar

Instructions

  1. Prepare Cabbage: Rinse and thinly slice the cabbage.
  2. Sauté Vegetables: Heat olive oil and butter in a large pot or Dutch oven over medium heat. Add diced onion and cook for 2-3 minutes. Stir in garlic and cook for 1 minute. Add red bell pepper, carrot, and green onions; cook for 3-4 minutes.
  3. Cook Cabbage: Add sliced cabbage, salt, pepper, onion powder, paprika, thyme sprigs, and water to the pot. Cover and reduce heat to medium-low. Simmer for about 10 minutes, or until cabbage is tender.
  4. Finish: Stir in white vinegar and sugar. Cook for 1-2 minutes more.
  5. Serve: Remove thyme sprigs and serve warm.

Notes

  • Adjust the amount of jalapeño or habanero pepper to your preferred level of heat.
  • If you don’t have fresh thyme, you can substitute with ½ teaspoon of dried thyme.
