Marinade:
- 1 cup brown sugar
- 3/4 cup ketchup
- 3/4 cup soy sauce
- 1/3 cup pineapple juice
- 3 tablespoons apple cider vinegar
- 1 tablespoon fresh minced ginger
- 1 tablespoon minced garlic
Chicken:
- 4–5 pounds boneless skinless chicken thighs
Instructions
- Marinade: Whisk together brown sugar, ketchup, soy sauce, pineapple juice, apple cider vinegar, ginger, and garlic. Reserve ⅓ cup for basting. Marinate chicken for 6-8 hours.
- Grilling: Preheat grill to medium-high. Grill chicken for about 5 minutes per side, until internal temperature reaches 165℉. Baste with reserved marinade and let rest before serving.
Notes
- For added flavor, grill pineapple slices alongside the chicken.
- Adjust soy sauce for a less salty marinade if desired.
