- For serving: chopped scallions, sesame seeds, rice (optional), to taste
Sauce:
- 1/3 cup low-sodium soy sauce
- 1/3 cup honey
- 1/3 cup ketchup
- 6 cloves garlic, minced
- 1/2 teaspoon apple cider vinegar
- 1 teaspoon fresh ginger, grated
- 1 pinch crushed red pepper flakes (optional)
- 2 tablespoons cornstarch
Instructions
- Add the chicken: Add the chicken thighs to your Crockpot, ensuring that they are arranged in an even layer.
- Prepare the sauce: In a medium bowl, combine the sauce ingredients, except for the cornstarch, and whisk until smooth and fully mixed.
- Cook the chicken: Pour the prepared sauce over the chicken in the Crockpot. Cook on high for 3.5 hours or on low for 6-8 hours, depending on your schedule.
- Thicken the sauce: Mix the cornstarch with 2 tablespoons of cold water in a small bowl to create a slurry. Pour the slurry into the Crockpot, stir, and cook on high for an additional 15 minutes to thicken the sauce.
