Marinade:
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 cloves garlic, peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Skewers:
- 2 chicken breasts (approx 350g/12.5 oz), chopped into bite-sized pieces
- 1 red bell pepper, chopped into large chunks
- 1 onion, peeled and sliced into squares
- 1 tbsp sesame seeds
- Small bunch of coriander/cilantro, roughly torn
Instructions
- Mix all the marinade ingredients together in a small bowl: 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves garlic, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey.
- Place the chicken in a bowl and pour three-quarters of the marinade over it, reserving the rest for basting during cooking. Cover and refrigerate for at least 1 hour.
- Soak wooden skewers if using, or use metal skewers.
- Preheat your BBQ or griddle until very hot.
- Thread the chicken onto skewers, alternating with red pepper chunks and onion slices. Discard any remaining marinade.
- Cook the skewers on the BBQ or griddle for 8-10 minutes, turning 3-4 times and basting with reserved marinade halfway through. Ensure chicken is cooked through.
- Serve sprinkled with sesame seeds and coriander, alongside salad and rice or potatoes.
