Description

These Honey Garlic Chicken Skewers are a perfect blend of savory and sweet, with a sticky, flavorful marinade that caramelizes beautifully on the grill. Easy to make and bursting with Asian-inspired flavors, these skewers are a fantastic addition to your summer BBQ menu.


Ingredients

Marinade:

  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 2 cloves garlic, peeled and minced
  • 1 tsp minced ginger
  • 3 tbsp dark soy sauce
  • 3 tbsp honey

Skewers:

  • 2 chicken breasts (approx 350g/12.5 oz), chopped into bite-sized pieces
  • 1 red bell pepper, chopped into large chunks
  • 1 onion, peeled and sliced into squares
  • 1 tbsp sesame seeds
  • Small bunch of coriander/cilantro, roughly torn

Instructions

  1. Mix all the marinade ingredients together in a small bowl: 1 tbsp vegetable oil, 1 tbsp sesame oil, 2 cloves garlic, 1 tsp minced ginger, 3 tbsp dark soy sauce, and 3 tbsp honey.
  2. Place the chicken in a bowl and pour three-quarters of the marinade over it, reserving the rest for basting during cooking. Cover and refrigerate for at least 1 hour.
  3. Soak wooden skewers if using, or use metal skewers.
  4. Preheat your BBQ or griddle until very hot.
  5. Thread the chicken onto skewers, alternating with red pepper chunks and onion slices. Discard any remaining marinade.
  6. Cook the skewers on the BBQ or griddle for 8-10 minutes, turning 3-4 times and basting with reserved marinade halfway through. Ensure chicken is cooked through.
  7. Serve sprinkled with sesame seeds and coriander, alongside salad and rice or potatoes.
