Sweetener (Optional)

  • 1/4 cup / 60 ml honey (depending on the sweetness of the watermelon)

Instructions

  1. Blend: Add the fresh watermelon to a blender and process until smooth, creating a consistent juice.
  2. Strain: Pour the blended watermelon through a fine mesh strainer into a measuring cup or bowl, extracting approximately 2 cups of juice. Skim any foam from the top and discard.
  3. Bloom: Pour half of the watermelon juice into a saucepan. Sprinkle the unflavored gelatin over the reserved juice remaining in the measuring cup and let it sit for a few minutes until absorbed.
  4. Warm: Warm the gelatin-containing juice over low-medium heat. Do not bring to a boil. Whisk until the gelatin is melted and combined. Add lemon juice and honey (if using), stirring well.
  5. Set: Pour the mixture into silicone molds or a baking dish. Chill in the refrigerator for at least 2 hours until firm. Remove from molds or cut into pieces to serve.
