- 8 medium tomatoes (Roma or similar), halved
- 2 medium onions, quartered
- 6 cloves garlic, peeled
- 4.5 ounce can mild diced green chiles
- 1/2 cup fresh cilantro
- 2 tablespoons freshly squeezed lime juice
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
Instructions
- Roast Vegetables: Preheat oven to 350°F. Place tomatoes, onions, and garlic on a baking sheet. Roast for 15 minutes, or until slightly charred. Let cool for 5 minutes.
- Blend: Add roasted vegetables, green chiles, cilantro, lime juice, salt, and pepper to a food processor. Pulse until desired consistency is reached.
- Chill: Transfer to a bowl, cover with plastic wrap, and refrigerate for 2-4 hours to allow flavors to meld.
Notes
- Add 1-2 jalapeños or other hot peppers to the baking sheet for a spicier salsa.
- Increase lime juice for a tangier salsa.
- Refrigerate salsa for 5-7 days or freeze for 3-4 months.
