Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the almond flour, protein powder, and salt until evenly mixed and free of lumps.
  2. Add Wet Ingredients: Add the peanut butter, maple syrup, and vanilla extract to the bowl. Mix well with a spatula or wooden spoon until all ingredients are fully incorporated and a soft dough forms.
  3. Incorporate Chocolate Chips: Gently fold in the mini chocolate chips until they are evenly distributed throughout the dough.
  4. Press Into Pan: Line an 8×8-inch baking pan with parchment paper. Transfer the dough to the pan and press it firmly and evenly into all corners to create a uniform thickness.
  5. Chill the Bars: Place the pan in the refrigerator for at least 4 hours, or overnight, to let the bars set and firm up.
  6. Slice and Store: Remove the set mixture from the pan using the parchment paper. Cut into 10 even bars and store in an airtight container in the refrigerator until ready to enjoy.
