For the Sausage:

  • 1 lb. lean ground chicken (96/4)
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. paprika
  • 2 Tbsp. maple syrup or sugar-free syrup (31g)

For Cooking:

  • 1 Tbsp. olive oil

Instructions

  1. Prepare the Sausage Mixture: In a large bowl, combine the ground chicken, salt, black pepper, garlic powder, cayenne pepper, paprika, and maple syrup. Mix well using your hands or a fork until all the ingredients are evenly incorporated.
  2. Shape the Sausage Patties: Divide the mixture into 8 equal portions. Using damp hands, shape each portion into a round patty about 1/2-inch thick for even cooking.
  3. Cook the Sausage Patties: Heat olive oil in a large nonstick skillet over medium heat. Once hot, add the patties, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  4. Serve and Enjoy: Remove the patties from the skillet and drain on a paper towel if desired. Serve warm as a breakfast side, in a sandwich, or as part of your favorite meal.
