  • 2 teaspoons (about 9g) coarse salt (see note)
  • 1 and 1/2 cups (360ml) water, close to room temperature at about 70°F (21°C)
  • optional: cornmeal for dusting pan

Instructions

  1. Mix Dry Ingredients: In a large ungreased mixing bowl, whisk the flour, yeast, and salt together.
  2. Add Water: Pour in the water and gently mix together until all the flour is moistened.
  3. Rise Time: Cover the dough and let it rise for 2-3 hours at room temperature.
  4. Refrigerate (Optional): For best flavor, refrigerate the dough for 12-72 hours.
  5. Shape and Rest: Shape the dough into loaves and let them rest for 45 minutes.
  6. Preheat Oven: Preheat the oven to 475°F (246°C).
