  • 4 ounces cheddar, pepper jack, or monterey jack cheese, grated (1 cup), divided

Instructions

  1. Preheat Oven: Heat the oven to 425°F. Slice the potatoes in half lengthwise, rub with oil, and season with 1/2 teaspoon salt and pepper. Roast cut side down on a baking sheet for 25 to 30 minutes until tender.
  2. Prepare Filling: In a bowl, mix beans, cottage cheese, cilantro, spices, half of the grated cheese, salt, pepper, and hot sauce.
