Description

Ingredients

Oat Mixture:

  • 2 cups quick cooking oats
  • 1 teaspoon baking powder

Wet Ingredients:

  • 1 egg
  • 3/4 cup any nut butter (almond, peanut, or cashew)
  • 3/4 cup pure maple syrup or honey
  • 1 teaspoon vanilla extract

Additional:

  • 3/4 cup dark or semi-sweet chocolate chips
  • Flaky salt (e.g., Maldon Sea Salt Flakes)

Instructions

  1. Preheat oven to 350 degrees. Line an 8 x 8 baking dish with parchment paper.
  2. In a large bowl, combine oats and baking powder.
  3. In a separate bowl, whisk the egg, then mix in nut butter, maple syrup or honey, and vanilla.
  4. Add wet ingredients to the dry ingredients and stir well. Mix in ½ cup of chocolate chips.
  5. Spread the mixture in the baking dish. Press the remaining chocolate chips on top.
  6. Bake for 30 minutes. Remove from oven, sprinkle with flaky salt, and let cool before slicing into 9 bars.
