Grilled Peaches:
- 6 large peaches, halved and pitted
- 1 tablespoon butter, melted (or substitute oil/vegan butter)
- 1 tablespoon coconut sugar
- 1/2 teaspoon cinnamon
- 3 cups vanilla ice cream
Instructions
- Preheat Grill: Warm your grill to medium heat to ensure even cooking of the peaches.
- Prepare the Crumb Topping: In a medium bowl, combine almond flour, coconut sugar, cinnamon, and crushed gluten-free cookies. Add the cold butter pieces and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Prepare the Peaches: Brush the cut sides of the peaches with melted butter (or oil/vegan butter). Sprinkle each peach half with coconut sugar and cinnamon for added flavor.
- Grill the Peaches: Place the peaches cut side down on the preheated grill. Cover and cook for about 4 minutes, or until grill marks appear and the peaches begin to soften.
- Add the Crumble and Finish Grilling: Turn the peach halves over. Spoon about 1 tablespoon of the crumb mixture into each peach half. Cover and cook for an additional 4-5 minutes, until the crumb is golden and the peaches are tender with grill marks.
- Serve: Remove the peaches from the grill and serve them warm, topped with scoops of vanilla ice cream if desired.
